I love pasta

There is something about warm weather that makes me crave pasta. I love it all. I even like those pasta salad's in a box. YUMMY! Well today it was warm, windy, and we even had a spring shower (that lasted all of 5 minutes) that made me NEED pasta! The best thing about pasta is you can add just about anything to it and it's good. Here's what I did tonight.

1 yellow squash, cut into pieces

1 zucchini, cut into pieces

1 onion, cut into pieces

1tbs minced garlic

1 green pepper

handful of cherry tomatoes, cut in two

**usually I add 1/2 block of cheese cut into pieces but i didn't have any tonight**

1-2 chicken breast

1 1/2 cups pasta (your choice I used Rotini)

Cook pasta according to package.

Grill chicken

Saute all veggies

Mix all cooked ingredients in large bowl and toss with Sun Dried Tomato Salad Dressing. And Presto, dinner is served!

**you can absolutely add or take away anything and it will still be wonderful. Mix up your own pasta salad and email it to me, I'll post your concoctions!!**

The Secret to Chicken is MAYO!

I am not too sure where I picked up this little secret but I can't do chicken with out it. My meal tonight was inspired by my friend Debbie, we ate a very similar meal at her house this weekend and I can't get it out of my mind. (Remember I am pregnant and I tend to get "stuck" on a food(s))

All you really do is get chicken and brush mayo on it. I baked at 350* for about 30-45 minutes until the center was no longer pink. You can BBQ, fry, bake, grill whatever just brush the mayo on it, season and cook! YUMMY!

Strawberry Pie

My friend April gave me this recipe and it is YUMMY! **WARNING NOT DIET FRIENDLY**

Pie Crust (Betty Crocker)
1c flour
1/2 tsp salt
1/3 cup plus 1tbs shortening
2-3 tbs cold water

1. Cut shortening into flour and salt until particles are the size of small peas.
2. Sprinkle with cold water and toss with fork until all flour is moistened and pastry almost leaves side of bowl.
3. Roll pastry from center to outside in all directions.
4. Fold pastry into fourths; place in pie plate with point in center. Unfold, ease into pie plate.
5. Fold edges over pie plate (toward center) and pinch to make the cute edge.

Pie Filling (April's Recipe)
¾ cup sugar
2 tbsp corn starch
2 tbsp corn syrup
1 cup water

Bring all of this to a boil until clear. Add 2 tbsp of Jello of your choice, then let that cool. While cooling clean and cut your fruit and fill a cooked pie crust with your fruit. Then add your syrup.

Dinner is ready when the smoke alarm goes off!

Well first of all I am a blog virgin, I guess. I have a site where you keep up with my kids, I have a myspace where I keep up with my friends but I have no site that is really just about me. But I must say I am pretty boring! There is nothing life altering about my life so why in the world would you want to read about it? There is one thing that I really love to do and I LOVE to talk about it. FOOD! I like to cook, and shocking enough I have never killed anyone with my concoctions! I have burned my fair share of chicken, overcooked my pasta, and put WAY too much rosemary in my pork chops but hey you should never trust a "perfect" cook!

I wanted a way to share recipes but who has time for an actual recipe box anymore? (although I love mine and will probably be buried with it) I thought I'd jump on board the blog train and share mine. When I get blog savvy I will have a link for you to email me you favorite dishes to share! So with that, bookmark my blog, and lets get cooking!
